Veal Burgers with New Vegetables Submitted By: Ron

Ingredients:

hamburger buns,
400 g (14 oz.) ground veal,
1 tomato,
1 red onion,
4 mini-zucchini,
4 thin slices of cheddar,
4 mini-corn,
4 mini-carrots,
2 green onions,
4 tbsp. barbecue sauce,
Olive oil,
Salt and freshly ground pepper.

Method:

Halve the zucchini, carrots and corn lengthwise. Peel the red onion and chop finely. Finely chop the green onions, setting aside 1/3 of the green part. Place the ground veal in a bowl and mix in the chopped onion, salt and pepper, then form into patties using BurgerMate. Heat a little olive oil in a skillet and color the vegetable for 2 minutes on each side. Season with salt and pepper and set aside in a warm place. Return the skillet to the heat, add a little more oil and cook the veal burgers for 5 minutes on each side. Meanwhile, toast the hamburger buns. Spread on some barbecue sauce then.  Place on the cheddar, onion, sliced tomato, veal patty and mini vegetables. Serve immediately.
