Ingredients:

400g minced chicken,
3/4 cup fresh breadcrumbs,
1 1/2 tablespoons Thai red curry paste,
3 spring onions, finely sliced.
1/4 cup coriander, chopped.
1 egg, lightly beaten,
olive oil spray,
4 hamburger buns,
mixed salad ingredients e.g. lettuce, cucumber, tomato.
4 fried eggs.

Instructions:

1.  Combine burger ingredients in a bowl.

2.  Shape chicken mixture into 4 patties using BurgerMate. Spray a little oil in a large non-stick frying pan and cook burgers for 2-3 minutes on each side.

3.  Place a burger in each hamburger bun, top with salad and fried egg. 4 Serve with a little sweet chilli sauce.
