Ingredients:

1 1/3 lbs lean ground beef,
2 tablespoons tomato paste,
1 1/2 teaspoons minced fresh tarragon,
Sprigs of fresh tarragon (optional),
Salt and ground pepper to taste,
4 tomato slices,
4 hamburger buns, split, lightly toasted.
Tarragon Mustard Sauce (recipe follows).

Instructions:

Preheat broiler or prepare grill.  In medium bowl, combine beef, tomato paste, tarragon, salt and pepper. Form into 4 burgers using BurgerMate and broil or grill 4 to 6 minutes on each side, or until burgers are cooked through and spring back to the touch.  Place a slice of tomato and a burger on top of each English muffin half. Top with warm Tarragon Mustard Sauce.

Tarragon Mustard Sauce:

In top of double boiler set over hot water, blend 1 1/2 tablespoons butter or margarine, and 1 1/2 tablespoons Dijon mustard. Remove from heat; add 1 tablespoon tarragon vinegar. Stir in 1/4 cup light sour cream and 1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon leaves. Season with salt, ground black pepper and ground red pepper to taste.
