Sweet Potato and Ditalini Patties Submitted By: Margaret

Ingredients:

2 pounds sweet potatoes,
½ cup ditalini,
1-1/2 ounce toasted pinioli nuts,
3 garlic cloves crushed,
5 tablespoons chopped basil,
½ cup grated Parmigiano cheese,
1/3-cup breadcrumbs,
Flour for dusting,
Olive oil for shallow frying,
Salt and pepper to taste.

Directions:

1. Bake the sweet potatoes until soft (about one hour).

2. Set aside and let cool.

3. Cook the pasta until al dente drain and rinse under cool water.

4. Peel sweet potatoes.

5. Mash the potatoes until no lumps remain.

6. Add the pine nuts, garlic, basil, Parmigiano, breadcrumbs, and pasta.

7. Stir the mixture well and season with salt and pepper.

8. Form into patties with your BurgerMate and dust with flour.

9. Over a medium flame, heat the olive oil in a fry pan.

10. Cook the patties until golden. (about 2 minutes per side)

11. Let drain on paper towel and serve.
