Sweet Potato and Coriander Albacore Tuna Patties Submitted By: Ceanna

Ingredients:

Tuna Pattie:

½ kg of kumara (i.e. sweet potato) - any colour,
3 x 95 g cans of Ocean Pure's albacore tuna,
¼ cup of finely chopped coriander,
2 teaspoons of crushed garlic,
2 teaspoons of crushed ginger,
2 egg yolks,
1 lime,
Breadcrumbs and flour.

Basic Salad Ingredients:

Rocket and/or watercress,
Cherrie tomatoes,
Shaved pickerino or parmesan cheese,
Fresh Basil.

Lime Dressing Ingredients:

Sour cream,
Juice of 2 limes,
Cracked pepper.

Directions:

Mash the kumara - ensure it is well drained and as dry as possible. Combine all ingredients (including mash) with a handful of breadcrumbs. Season with salt and pepper and the zest of one lime. Make into patties using BurgerMate and coat with a breadcrumb and flour mix. Bring pan to temperature, brown patties on both sides. Layer the basic salad ingredients as desired. You may add any extras you like (i.e. peppers, spring onions, mushrooms, carrot). Combine the lime dressing ingredients and drizzle over the basic salad. Serve with the warm tuna patties and enjoy.
