Ingredients:

Prepared instant mashed potatoes - 8 cups,
Canned salmon, drained, skin and bones removed - 7 cups,
Dried parsley - 1/4 cup,
Salt - 1 teaspoon,
Oven spray - As Needed,
Lettuce leaves - 24 each,
Hamburger buns - 24 each,
Tomato slices - 24 each.

Directions:

In large bowl, mix together potatoes, salmon, parsley and salt.  Lightly spray sheet pan with oven spray. Form salmon mixture into patties using BurgerMate; place on sheet pan.  Bake in 425 F oven 20 to 25 minutes, turning salmon burgers with spatula after 10 minutes.  Place 1 lettuce leaf on bottom of each hamburger bun, top with 1 salmon burger and 1 tomato slice; close bun.

Tip:

Serve with condiments such as low-fat mayonnaise, ketchup and mustard.
