RECIPE INGREDIENTS:

1 beaten egg,
2 tablespoons milk,
1/4 cup fine dry bread crumbs,
1/4 cup finely chopped green onion,
2 tablespoons snipped fresh parsley,
1 teaspoon anchovy paste,
1 teaspoon finely shredded lemon peel,
1/4 teaspoon salt,
1/4 teaspoon pepper,
1 pound ground chicken,
2 tablespoons margarine or butter.

RECIPE METHOD:

In a mixing bowl stir together egg, milk, bread crumbs, green onion, parsley, anchovy paste, lemon peel, salt, and pepper. Add chicken and mix well. (Mixture will be soft.) Shape chicken mixture into four patties using BugerMate.  In a large skillet melt the margarine or butter. Add chicken patties and cook over medium heat for 8-12 minutes, or till no pink remains, turning once. Or, to broil, preheat broiler and place patties on the unheated rack of a broiler pan. Broil 3-4 inches from the heat for 10-12 minutes, turning once.
