Ingredients:

3 lbs. Ground beef chuck,
Salt and pepper as needed,
1 ½ lb. Osso buco, meat removed from bone,
12 Challah rolls, split.
Germolata aioli (recipe follows),
12 Gruyère cheese, 1/8-in. Slices.
6 oz. Red bell peppers, roasted, cut in strips.
3 oz. Arugula.

Germolata aioli:

1 egg yoke,
1 anchovy fillet, minced.
2 Tbsp. Lemon juice,
1 ½ tsp. Garlic, minced.
1 tsp. Lemon zest, freshly grated.
¾ Cup Olive oil,
¼ cup Flat-leaf parsley, minced.
Salt and pepper as needed,
water as needed.

Directions:

Season ground beef with salt and pepper. Make patties using BurgerMate, shaping 8 oz. Ground beef with 2 oz. Osso buco. Grill to medium doneness. Grill rolls, cut sides down. Spread germolata aioli on roll bottoms, top with burger, cheese, ½ oz peppers and ¼ oz. Arugula.

Germolata aioli:

Place egg yolk, anchovy, lemon juice, garlic and lemon and lime zests in food processor; process until blended. With motor running, slowly add oil; process until emulsified. Stir in parsley; season with salt and pepper. Thin with water, if necessary.
