MountainTop Bleu Burgers with Warm Fig Pure Submitted By: Paula

Ingredients:

2 garlic cloves, minced.
2 tablespoons chopped thyme,
1 cup dried figs, stems removed.
2 tablespoons extra virgin olive oil,
Coarse sea salt and freshly ground black pepper,
1 large red onion, peeled and cut into thin slices.
1 pound lean ground beef,
4 whole grain hamburger buns or Kaiser rolls,
1 Mountain Top Bleu cheese, halved then sliced into ¼ inch slices,
3 ounces arugula leaves or other summer greens, rinsed well and dried.
Olive oil cooking spray.

Directions:

Heat grill to medium heat. In a food processor, combine ¼ of garlic (about ½ teaspoon), 1 tablespoon thyme, the dried figs, and 1 tablespoon olive oil. Process to form a smooth and spread able paste. If mixture is too thick, add 1 teaspoon of water. Season with salt and pepper, and pulse to combine. Set aside. In a mixing bowl, combine remaining garlic and thyme with ground beef. Season with salt and pepper and mix well. Form beef into 4 patties using BurgerMate and set aside. Place the sliced onions on a plate and lightly coat each side with cooking spray. Grill the onions until lightly charred on first side, about 3 minutes. Flip the onions and continue grilling until tender and charred on the other side, about three minutes more. Transfer onions to a clean plate and keep warm. Place beef patties on the grill. Grill until browned on the first side, about 7 to 10 minutes. Flip the beef patties and continue grilling until browned both sides, another 7 to 10 minutes. Transfer burgers to a clean plate and keep warm. Split hamburger buns or rolls in half and place cut side down on grill; cook until warm and toasted. Transfer to work surface. Spread ¼ cup fig purée on the bottom half of each bun and top each with a burger. Layer each with sliced cheese, grilled onions, and a small handful of greens. Top with remaining bun or roll half and serve.
