Moroccan Spiced Patties Submitted By: Kay

Ingredients:

4 cups meat-loaf mixture,
2 medium carrots, grated (1 cup).
3 scallions, trimmed and thinly sliced.
1 teaspoon paprika,
1 teaspoon ground cumin,
1/2 teaspoon ground cinnamon,
2 tablespoons olive oil.

Mint Couscous with Zucchini and Tomato:

1 1/2 cups uncooked plain instant couscous,
1 medium zucchini (halved lengthwise and thinly sliced, 2 cups),
1 tablespoon lemon juice,
1 teaspoon kosher salt,
3 tablespoons olive oil,
1 chopped medium tomato (1 cup),
1/3 cup chopped fresh mint,
1/2 cup golden raisins.

Directions:

In a large bowl, combine all the ingredients except the oil. Mix well. Make patties using BurgerMate. Heat half the oil in a large nonstick skillet and cook 6 of the patties over medium heat until golden, 7 to 8 minutes per side. Repeat with the other 6 patties and the remaining oil. Serve atop Mint Couscous with Zucchini and Tomato.

Mint Couscous with Zucchini and Tomato:

Place instant couscous in a large bowl and add 2 cups boiling water. Cover with plastic wrap and set aside for 5 minutes. Uncover and fluff with a fork. Add lemon juice, kosher salt, olive oil, zucchini, tomato, fresh mint, raisins. Toss until well combined.
