Maui Onion Burgers Submitted By: Mark

Ingredients:

3 large ripe plum tomatoes,
2 green onions, chopped.
2 tablespoons chopped fresh cilantro,
2 cloves garlic, minced.
1 tablespoon olive oil,
1 tablespoon fresh lime juice.

For the Burgers:

1 1/3 pound lean ground beef,
1/3 cup chopped sweet onion, such as Maui or Vidalia.
1/4 cup chopped fresh parsley,
1/8 teaspoon salt,
1/8 teaspoon black pepper,
4 hamburger rolls.

Directions:

1. Halve tomatoes lengthwise. Remove seeds; cut into 1/2-inch dice. Place in medium bowl. Add green onions, cilantro, garlic, oil and lime juice; toss to mix. Cover bowl; let stand at room temperature while preparing burgers.

2. Preheat broiler. In a medium bowl, combine ground beef, onion, parsley, salt and pepper; mix well. Shape into four 4 patties using BurgerMate. Broil burgers for 4 minutes per side for medium doneness.

3. Split rolls; place under broiler until lightly toasted, about 1 minute. Place burgers on rolls; top with salsa.
