Lamb Cheeseburgers with Canadian Oka Submitted By: Helen

Ingredients:

1 lb (500 g) lean ground lamb or beef,
1 clove garlic, finely chopped.
1 medium onion, finely chopped.
1/4 cup (50 ml) chopped fresh herbs (rosemary, thyme, parsley, chives).
1 tbsp (15 ml) Dijon mustard,
4 oz (100 g) Canadian Oka cheese, in 4 pieces.
Pepper to taste.
4 slices red bell pepper,
4 slices eggplant,
4 Kaiser buns,
4 lettuce leaves,
Olive oil.

Mayo and Mustard Sauce:

1/2 cup (125 ml) real mayonnaise,
2 tbsp (30 ml) Dijon mustard,
2 tbsp (30 ml) chopped fresh herbs (rosemary, thyme, parsley, chives).

Preparation:

Mix ground meat with garlic, onion, herbs and Dijon mustard. Shape into patties using BurgerMate. Place pieces of Canadian Oka cheese on them. Place on preheated BBQ grill and cook as desired. Season and oil pepper and eggplant slices, then cook as desired. Make sauce by mixing all second list ingredients together. Toast buns on grill at the last minute.  Place patties on half-buns, spread with sauce, then garnish with grilled vegetable slices and lettuce. Cover with remaining half-buns and skewer with rosemary branches to hold burgers together.  Serve immediately accompanied with home-made potato chips.
