Grilled Turkey Burgers with Creamy Coleslaw and Quick Pickles Submitted By: Sara

Ingredients:

1 1/2 pounds lean ground turkey,
1/2 cup fresh (soft) breadcrumbs,
1/2 small onion, minced.
2 tablespoons chopped fresh parsley,
4 fresh basil leaves, thinly sliced.
1 tablespoon mayonnaise,
1 tablespoon Dijon mustard,
1 tablespoon Worcestershire sauce,
1 tablespoon hot sauce,
1 teaspoon sea salt,
1/2 teaspoon freshly ground pepper,
4 whole-wheat hamburger buns, toasted.
Toppings: Mustard or mayonnaise, tomato slices, Quick Pickles, and Creamy Coleslaw with Frisée and Apple.

Directions:

1. Combine first 11 ingredients, and form into patties using BurgerMate. (Do not overmix; burgers will be mushy.) Sprinkle with additional sea salt and pepper, and grill on a lightly oiled rack over medium-high heat 6 to 7 minutes on each side or until done. Remove from grill, cover loosely, and let rest about 5 minutes.

2. Spread toasted buns with mustard or mayonnaise; top with tomato slices, burger, Quick Pickles, and a spoonful of Creamy Coleslaw with Frisée and Apple.

Cream Coleslaw with Frisée and Apple:

If you can't find fresh frisée lettuce, simply add another cup of shredded cabbage.

2 cups shredded cabbage,
1 small head frisée, washed, drained, and torn into bite-size pieces.
1 Granny Smith apple, cored and cut into thin strips (julienned).
10 basil leaves, coarsely chopped.
1/2 cup sour cream,
2 tablespoons mayonnaise,
1 tablespoon cider vinegar,
1 teaspoon sugar,
2 teaspoons Dijon mustard,
1/2 teaspoon sea salt,
1/2 teaspoon freshly ground pepper.

Directions:

Combine all ingredients in a large bowl, and stir to blend. Refrigerate in an airtight container until ready to serve.

Quick Pickles:

These can easily be made up to a week ahead and stored in the refrigerator in an airtight container.

MAKES: about 1 cup
PREP: 5 minutes
CHILL: 8 hours

Ingredients:

1/2 cup rice vinegar,
1 tablespoon sugar,
2 tablespoons chopped fresh mint,
Juice of 1 lime (about 1 to 2 tablespoons),
1 teaspoon sea salt,
1/2 teaspoon freshly ground pepper,
2 small cucumbers, partially peeled and thinly sliced.

Directions:

Combine first 6 ingredients, and stir until sugar dissolves. Add cucumber, and chill several hours or overnight.
