Grilled Lamb Burgers with Cucumber Yogurt Sauce Submitted By: Sara

Ingredients:

2 garlic cloves, minced.
2 tablespoons chopped fresh oregano,
2 tablespoons chopped fresh mint,
1 teaspoon sea salt,
1/2 teaspoon freshly ground pepper,
1 1/2 pounds ground lamb,.
4 pita rounds, cut in half or with one-third of top cut off, toasted.
Toppings: Cucumber Yogurt Sauce; lettuce leaves; thin red onion slices; pepperoncini pepper, pickle, or cucumber slices.

Directions: 

1. Combine first 5 ingredients in a large bowl, and mix well. Add lamb, and combine.  Form patties using BurgerMate. Sprinkle with additional sea salt and pepper. Grill burgers over medium-high heat, turning only once, 3 to 4 minutes on each side or to desired degree of doneness. Remove from grill, cover loosely, and let rest about 5 minutes.

2. Open and line each toasted pita with about 2 tablespoons Cucumber Yogurt Sauce, a lettuce leaf, an onion slice, and pepperoncini pepper, pickle, or cucumber slices. Place burgers in pita rounds. Serve additional sauce on side, if desired.

Cucumber Yogurt Sauce:

English cucumbers are thin, long, and nearly seedless; they often come shrink-wrapped. If you can't find one, a regular cucumber will do.

MAKES: about 1 2/3 cups 1 cup plain fat-free yogurt

Ingredients:

2 green onions, minced.
1/2 English cucumber, grated and drained well.
1 garlic clove, minced.
Zest and juice of 1 lemon (about 1 teaspoon zest and 2 to 3 tablespoons juice),
1 tablespoon chopped fresh mint,
1 tablespoon chopped fresh parsley,
1/2 teaspoon sea salt,
1/2 teaspoon freshly ground pepper.

Directions: 

Combine all ingredients, and stir to blend. Refrigerate in an airtight container until ready to serve.
