Greek Lamb Burger Submitted By: Dale
Date/Time : July-16-2006, 13:39:47

Ingredients:

Yogurt Sauce:

1 plum tomato, chopped.
1/4 cup plain low-fat yogurt,
2 tablespoons light mayonnaise,
3/4 cup loosely packed fresh mint leaves, coarsely chopped.
Salt and ground black pepper.

Lamb Burgers:

11/4 pounds ground lamb,
1/4 cup walnuts, chopped (optional).
1 garlic clove, crushed with press.
2 teaspoons ground cumin,
4 (6-inch) pitas,
1 medium Kirby (pickling) cucumber, unpeeled and sliced.

Ingredients:

1. Prepare outdoor grill for direct grilling over medium heat.

2. Prepare Yogurt Sauce: In small bowl, stir tomato, yogurt, mayonnaise, 2 tablespoons mint, 1/4 teaspoon salt, and 1/4 teaspoon pepper until blended; set aside. Makes about 3/4 cup.

3. Prepare Lamb Burgers: In medium bowl, combine lamb, walnuts, if using, garlic, cumin, 3/4 teaspoon salt, and remaining mint until just blended. Shape lamb mixture into four burgers using BurgerMate.

4. Place burgers on very hot grill rack; cook 10 to 12 minutes for medium or until desired doneness, turning over once. Burgers should reach an internal temperature of 160°F.

5. To serve, cut off one-third from side of each pita; save for making crumbs another day. Place burgers in pitas with Yogurt Sauce and cucumber.
