Ingredients:

750 grams white fish fillets,
¾ cup stale breadcrumbs,
¼ cup chopped fresh parsley,
2 teaspoons lemon zest (the finely grated peel of a lemon),
1 egg,
freshly ground black pepper to taste,
pinch sea salt,
plain flour,
hamburger buns,
lettuce leaves,
1 medium cucumber, sliced.
1 medium tomato, sliced.
bean sprouts.

Herb and Garlic Mayonnaise:

½ cup mayonnaise,
1 clove garlic, crushed.
1 tablespoon chopped chives,
½ tablespoon chopped parsley,
½ tablespoon fresh lemon juice.

Method:

Process or blend fish, breadcrumbs, parsley, lemon zest, black pepper, salt and egg until smooth.  Divide into equal portions.  Shape mixture into patties with your BurgerMate and then put into refrigerator to set while you make the herb and garlic mayonnaise and get the buns and salad ready.

To make the mayonnaise, combine all ingredients in a small bowl.

Toss each patty lightly in flour, cook on a well greased barbecue plate or in a frying pan for approximately five minutes on each side.  lternatively, they can be microwaved on medium high for approximately three minutes each side.

Split buns, toast cut sides under a hot griller.  Place cooked patties on bun first, then salad (sprinkled with extra sea salt and freshly ground black pepper if desired) and mayonnaise.  Serve immediately either on their own, or with frozen or home-made chips/fries or potato wedges.
