Gourmet Beef Burgers with Rocket and Garlic Aioli Submitted By: Geoff

INGREDIENTS:

BURGERS:

600g lean mince,
2 spring onions, finely chopped.
1 teaspoon tumeric,
1 tablespoon fresh rosemary, chopped.
1 tablespoon fresh parsley, chopped.
40 g fresh breadcrumbs,
1 egg,
1 tablespoon Worcestershire sauce,
1 teaspoon Dijon mustard.

MAYONNAISE:

¼ cup whole egg mayonnaise,
1 small clove garlic, crushed.
1 tsp Dijon mustard,
1 tsp lemon juice.

TO SERVE:

4 slices of sourdough bread,
4 large slices of beetroot,
4 slices of edam or swiss cheese,
1 small red onion, sliced into rings.
1 bunch wild rocket,
2 vine ripened tomatoes, sliced.

METHOD:

Heat a BBQ or flat pan. In a large bowl combine the mince, spring onions, tumeric, rosemary, parsley, breadcrumbs, egg, Worcestershire sauce and mustard. Form into burgers using BurgerMate. In a small bowl combine mayonnaise, garlic, lemon juice and mustard. Cook burgers for 3 - 4 minutes on each side. Just before burgers are cooked place cheese on the top to melt. To serve spread mayonnaise on base and top of bun. First place the burger then beetroot, tomato, red onion and rocket.
