Gorgonzola-Stuffed Pork Burgers Submitted By: Kelly

Ingredients:

1/2 cup fine, dry bread crumbs.
1/2 teaspoon ground sage,
1 1/2 pounds ground lean pork,
1/2 tablespoon Worcestershire sauce,
2 ounces Gorgonzola cheese, crumbled.
4 English muffins,
4 tablespoons light mayonnaise, or to taste.
1/3 cup finely chopped red onion (about 1/2 small red onion),
16 leaves spinach, preferably baby spinach, stems removed.

Directions:

In large bowl, combine bread crumbs and sage. Add meat and Worcestershire sauce; combine well. Form meat into patties using BurgerMate. Using fingers, form a well in each patty and stuff with a quarter of thecheese. Seal hole, crimping meat together so that no cracks or holes exist. Grill meat, covered, until thermometer inserted into only meat (not into cheese) reads 160 degrees.  Meanwhile, toast muffins until golden, then lightly spread with mayonnaise.  To make burger, top one half of each muffin with a quarter of diced red onion, 4 spinach leaves, patty and other half of muffin. Repeat to make 4 burgers.
