German Hamburgers Topped with Spinach and Cheese Submitted By: Nick

Ingredients:

2 lbs of ground chuck,
1 lrg onion, finely chopped.
2 garlic cloves, finely chopped.
1 egg,
3 tbsp breadcrumbs,
1 tsp Dijon mustard,
2 tbsp finely chopped parsley,
A dash of Worcestershire sauce,
Salt, Pepper.


Topping:

1 pack frozen & pre-cooked spinach, thawed.
1 shallot, finely diced.
1 garlic clove, finely diced.
1 tsp butter,
A pinch of nutmeg,
Salt, Pepper.
A dash of lemon juice.
A slice of swiss cheese.

Directions:

Start by breaking up the ground beef in smaller pieces, add the onion, garlic, mustard and the parsley and, by using your hands, mix everything roughly together. Now add the breadcrumbs and the egg and repeat until it's all thoroughly combined. The crumbs and the egg prevent them from falling apart during the frying process. Season with a dash of Worcestershire sauce, salt and pepper, mix again and set aside.

In the meantime, prepare the spinach by melting the butter in a pan or pot over medium heat and saute the shallot and garlic until soft, about 5 to 10 mins. Add the spinach, season with nutmeg, salt, pepper and lemon juice and let it slowly simmer on low heat for about 10 mins.

Back to the burgers...

Form the meat into nicely sized patties using BurgerMate.

Melt 2 tbsp butter, not oil!, because oil becomes too hot, in a frying pan over medium heat. When the butter starts to bubble, add the burgers, 4 at a time and fry them to your liking.

TIP: Flip them over every 3 mins or so. Do not squeeze them because they will lose their juices. If the juices leak out from the top, they are almost done. Flip them over for one more time and voila...they're ready.

I you like a crispier version, lightly coat the top and bottom of the burgers with some breadcrumbs then fry them.

Once they are done, top them with the hot spinach, cover with a slice of cheese and put them under the broiler for a minute or until the cheese is melted and shows some slightly brown spots. Use a thicker sliced cheese for that, not those Kraft Singles...they simply melt and turn into liquid.

Serve it all with some homemade fries or french fries, a veggie risotto, a salad or whatever else you can come up with.
