Chicken and Tarragon Burgers Submitted By: Sandy

Take:

1 1/2 lbs chicken breast fillet, minced.
1/2 onion, grated.
1 tbsp fresh tarragon, roughly chopped.
Salt and freshly ground black pepper,
6 tbsp oil,
2 large Maris Piper (or all purpose) potatoes, scrubbed and in wedges.
Frilly salad leaves.
Olive oil and lemon juice for dressing.

Make:

Place chicken mince in a bowl and add grated onion, tarragon and season with salt and freshly ground black pepper. Mix well with the hands. Shape into patties using BurgerMate. Transfer to a plate and chill in the fridge for 15 minutes.  Heat 2 tbsp oil in a pan and fry burgers on both sides until golden brown and cooked through. At the same time cook potato wedges in remaining oil in another pan until crisp and golden.  Pile burgers and wedges onto plates and serve with a salad lightly dressed with olive oil and lemon juice.
