Cervena Steak with Hamburger French Fries and Pickle Chips Submitted By: David

Ingredients:

Hamburger - 6oz Cervena Denver Leg trim,
2oz bacon,
1 tsp salt,
1 tsp ground juniper berries,
2tsp salt,
1 tsp black pepper,
1 tsp Dijon mustard.

French Fry Charlotte:

4 large potatoes,
Oil for deep frying.

Coffee Barbecue Sauce:

1/4 cup vegetable oil,
1/2 onion (chopped),
1/2 cup chopped garlic,
1/4 cup chopped fresh coriander,
1 Serrano or small green chili pepper,
1 tsp ground cumin,
1 tsp chili powder,
1 tsp red pepper flakes,
zest of 1 lemon,
3/4 cup coffee beans,
1/4 cup dark-brown sugar,
3/4 cup red-wine vinegar,
juice of 1 lemon,
1 cup ketchup,
2 tbsp freshly ground salt,
2 tbsp freshly ground pepper,
2 cups tomato fondue.

Preserved Lemon Rings in Tempura Butter (Yield about 30 lemon rings):

5 lemons for preserving,
1 cup seltzer or club soda,
1 cup all-purpose flour,
1 egg oil for frying.

Dill Pickle Chips:

large dill cucumber,
salt to season field greens.

Method:

Cervena Hamburger

1) Finely dice the Cervena and bacon together.

2) Mix in all other ingredients.

3) Shape into patties using BurgerMate.

4) Slowly sauté at medium heat the burgers on all sides.

5) Season lightly with salt and pepper, remove when cooked.

French Fry Charlotte:

1) Line four buttered stainless steel molds with blanched french fries, packed as tight as possible.

2) Deep fry at 350º until crisp.

3) Remove the ring from fryer, drain and unmold onto plate.

Coffee Barbecue Sauce:

1) Heat oil in large sauce pan.

2) Add first section of ingredients and cook, stirring for two minutes.

3) Stir second section of ingredients into sauce pan.

4) Cook, stirring occasionally, until liquid is reduced by half.

5) Stir third section of ingredients into sauce pan.

6) Cover and simmer on low heat for 2-3 hours, stirring occasionally.

7) Strain and adjust seasoning.

Cervena Steak:

1) In a sauté pan, add small amount of oil to high heat.

2) Season Cervena steaks with salt and pepper.

3) Sear on both sides, keeping medium rare.

Lemon Rings in Tempura Butter:

1) Remove flesh from whole preserved lemons and cut into rings.

2) Cook rings in simple syrup until just soft. Drain

3) For the tempura butter, add liquids to dry goods and whisk in with a fork. Do not over work. Keep very cold.

Dill Pickle Chips:

1) Slice a large dill cucumber into very thin slices and place on paper.

2) Leave overnight in a warm oven until very dry and crisp.

3) Season with a little salt.

To Serve:

Fill the molded ring of French fry charlotte with the Cervena hamburger. Arrange the Cervena steaks on plate with the hamburger and French fries. Top with dressed field greens and garnish with crisp pickle chips, lemon rings and barbecue sauce.
