Beef Patties with Red Capsicum and Tomato Salsa Submitted By: Clyde

Ingredients:

SALSA:

2 red capsicums, roasted and skinned.
1 tomato, skinned and seeded.
2 Tbsp fresh coriander or parsley, chopped.
1 garlic clove (s), crushed.
1 Tbsp lemon juice,
1/2 tsp sugar,
black pepper, freshly ground.

PATTIES:

500 g minced beef,
1/2 cup dry breadcrumbs,
2 MAGGI Beef Stock Cubes, crumbled.
1 egg, beaten.
1 clove garlic, crushed.
2 Tbsp chopped parsley,
1/2 tsp ground cumin,
1 tsp ground coriander,
3 tsp oil.

Directions:

Method Prepare the Salsa:

Chop the red capsicums and tomato and place in a bowl. Add the remaining ingredients and mix well. Set aside.

Prepare the Patties:

Combine all the ingredients, except the oil, in a bowl and mix thoroughly. Shape the mixture into patties using BurgerMate, then brush with the oil. Barbecue or grill patties until golden brown and cooked through. Turn once during cooking. Serve the patties with the Salsa and a leafy green salad on the side.
