Beef Burgers with Red Pepper Salsa Submitted By: Wendy

Ingredients:

 l 1/3 lb Minced Beef,
1 Onion, finely chopped and fried.
2 tablesp. Chopped parsley,
1 Egg yolk,
Dash of Soy sauce,
Salt & Black Pepper.

Salsa:

1 Red Pepper, deseeded & chopped.
2 Large tomatoes,
1 small red onion, chopped.
Juice of half a Lemon,
1 Green Chilli, chopped.
1 tablesp. Olive Oil,
2 tablesp. Parsley or Basil,
Salt & Black Pepper.

Method:

Mix the Beef, Onion, Parsley, Soy Sauce, Egg Yolk and Seasoning together Shape into 4 burgers using BurgerMate, refrigerate until ready to cook. Preheat the dish Cook two burgers at a time, for 3 inutes on the first side 2 minutes on the second. Ensure the burgers are cooked by piercing them to see if the juices run clear. Stand uncovered for 2 minutes before serving. 

To make the Salsa:

Add all of the salsa ingredients in a food mixer and chop on the pulse setting. It can be as chunky or as smooth as you like. Refrigerate until ready to use.
