BBQ Rice and Zucchini Patties |

Ingredients: 1 1/2 cup of cooked brown rice, 2 cups of grated zucchini, 1 finely chopped onion, small amount of chopped fresh parsley, 2 beaten eggs, 1 can of creamed corn, 1 cup of breadcrumbs, pepper and salt to taste, 1 large dab of margarine/butter/oil. Directions: This is so easy all you have to do is mix all the ingredients in a bowl really well and make into balls. Place in BurgerMate and from into Patties. Place on hot greased BBQ. Brown on each side and serve These patties are lovely with a dab of chutney or sour cream. |
