Aberdeen Angus Burger with Red Wine and Herb Butter Submitted By: Marcy

Ingredients:

750g Aberdeen Angus mince,
1 red onion, chopped.
1 tablespoon soy sauce,
2 tablespoons tomato ketchup,
I teaspoon chopped garlic, (mix ingredients together).

Red Wine and herb butter:

½ red onion, chopped.
1 teaspoon chopped thyme,
1 teaspoon chopped rosemary,
250g butter at room temperature,
200ml red wine,
2 cloves garlic,
handful chopped flat leaf parsley leaves,
1 tablespoon chopped chives,
salt and pepper to taste.

Method:

Place wine, thyme, onion, garlic and rosemary in a sauce pan and reduce until all liquor has disappeared.Cool. Place in a food processor with the butter, parsley and chives and blitz to a fine puree. Roll in cling film in a sausage shape. Chill until set. Take the mince mixture and divide into 4 equal amounts. Place cling film on a board and spread each piece of mince onto cling. Take a knob of red wine and herb butter and place in the middle. Fold the meat around this and form into patty using BurgerMate. Grill on barbecue, having brushed lightly with oil.
